Captain Agustina Rosso
Originally from Argentina, Agustina discovered her passion for the ocean while traveling through Asia and Mexico after studying law. What began as a personal adventure became a career at sea, working as a professional dive instructor and captain across
Australia and the Mediterranean.
For Agustina, life on board is about much more than navigating from one destination to another. It is about sharing her love of the ocean and helping guests feel comfortable exploring it. Whether guiding a first dive, discovering a quiet anchorage or enjoying a day under sail, she brings a calm approach, a warm personality and an adventurous spirit. Her priority is for every guest to feel safe, relaxed and free to enjoy their time on the water.
Chef Javier Romero
Originally from Granada in southern Spain, Javier brings over 15 years of culinary experience to Adagio. His career has taken him from restaurants and luxury hotels in Spain to private islands on Australia’s Great Barrier Reef and yachts in the Mediterranean. Six years in Australia shaped his love of fresh seafood, Asian flavors and the resourceful creativity that comes with cooking in remote places.
His cooking is rooted in the Mediterranean: colorful, generous and built around good ingredients. Expect Spanish favorites, fresh seafood, vibrant salads and influences gathered along his travels, with menus thoughtfully adapted to each guest’s tastes and
dietary needs. Away from the galley, Javier is a keen scuba diver and a qualified yoga teacher. He brings that same attentive, welcoming approach to the table, making each meal a moment to relax, connect and enjoy.
With Agustina at the helm and Javier in the galley, days on Adagio are shaped around what you enjoy: sailing, diving, snorkeling, sharing a delicious meal or simply unwinding with a sea view. Their shared passion for diving, complemented by Javier’s background in yoga, brings opportunities for both adventure and relaxation. Above all, they want you to
feel at home on board, knowing the details are taken care of while you enjoy your
Caribbean escape.
